
Our story
Natalie Schultz is the founder and head pastry chef of Fig Tree Patisserie.
The name is inspired by her love of French pastry, her grandparents' love of baking, and the fig trees they grew at home. Fig Tree specializes in macarons, custom cakes, vegan, gluten-free and keto baking, and carries the Sicilian roots Natalie grew up with alongside the classical technique she trained in.
After amassing a steady and loyal customer base, Natalie sought out a starter space to expand her reach and widen her ties to the Buffalo community. She graduated from the Niagara Falls Culinary Institute in 2017 and has a history of working with small, locally and women-owned businesses.
A competitive swimmer for over a decade, Natalie is no stranger to beating an old record and out-doing herself, which you can see in her body of work on Instagram and Facebook at @figtreepatisserie, where the full standing menu and rotating holiday menu are posted.
What we make
Every day the case is stocked with French pastry alongside vegan, vegan gluten-free, gluten-free and keto items. Beside that sit the macarons, all gluten-free by recipe, with a brand new flavor introduced every month. Custom cakes and hand-piped cut-out cookies are made to order with at least 10 days notice.
We specialize in being allergy friendly and take the utmost precaution against cross contamination, but nuts, peanuts, soy, dairy, eggs and gluten are all used in the same facility, so we cannot describe anything we make as free of them.
Visiting the bakery
You will find us at 3062 Delaware Avenue, Buffalo, NY 14217, with free parking in the lot behind the building off Kinsey Avenue. From June to October we are also at the Kenmore Farmers Market on Sunday mornings from 9am to 1pm.
