
Dietary requirements are not an afterthought here. They sit in the same case as everything else, made with the same care.
Most bakeries treat gluten-free and vegan as a special order, or as one sad item at the end of the counter. We do not. Vegan, vegan gluten-free, gluten-free and keto items are baked as part of the daily run and sit alongside the classics. It is the main reason people drive across Western New York to us: nobody in the group has to sit the dessert course out.
Macarons are gluten-free by recipe
A French macaron is built on almond flour and egg white, so every macaron we make is gluten-free by recipe, not by substitution. There is no separate gluten-free range to order in advance. Whatever is in the case is already gluten-free, including the brand new flavor we introduce every month.
We can also make macarons dairy-free on request, which covers most of the fillings. Ask when you order and we will tell you honestly which flavors will work.
Vegan and vegan gluten-free
The daily pastry case carries vegan items, and a subset of those are vegan and gluten-free together, which is the combination people struggle hardest to find. Because the case is baked to the day rather than to a fixed list, what is there changes. If you are making a special trip for something specific, call 716-436-3001 that morning and we will tell you what came out of the oven.
Keto
Keto items are part of the regular case as well. For a platter or a dessert table with a keto element, order ahead so we can bake to your numbers rather than hoping the case has enough on the day.
Custom orders with a dietary requirement
Many custom cake and cut-out cookie designs can be adapted. Tell us the requirement at the point of enquiry rather than at the end, because it changes what is possible in the build, particularly for tiered and sculpted cakes. Custom orders need at least 10 days either way. Our ordering and pickup page covers the rest of the process.
The honest allergen position
Nothing we make is allergen-free. We specialize in being allergy friendly and take the utmost precaution against cross contamination, but nuts, peanuts, soy, dairy, eggs and gluten are all used in the same facility. We cannot describe any item as free of them, and nothing here should be treated as safe for a severe or anaphylactic allergy.
We would rather tell you that plainly than have you find out the hard way. If you are managing coeliac disease or a severe allergy, please make your own judgement, and talk to us first so you have the full picture.
